El Torito has been creating picante Mexican cuisine for more than 30 years. Although authentic Mexican food was little known to most Americans in 1954, Larry J. Cano's recipes quickly caught on in California, then spread deliciously across America. Today El Torito is the oldest nationwide chain of Sonora-style Mexican eateries, with more than 100 locations in 20 states and 35 locations in Southern California. All El Torito dishes are prepared fresh daily, and the margaritas are justifiably famous.

To make egg wash: Beat eggs and water. Set aside.

Make cereal coating mix: Mix corn flakes, sugar and cinnamon together and set aside.

To make deep-fried ice cream: Form ice cream into 2-ounce balls. Place on a cookie sheet in freezer for 2 hours. Remove ice cream from the freezer and dip into egg wash then cereal, back into egg wash, then back into cereal. Be sure ice cream is covered completely. Refreeze.

Remove ice cream balls from freezer and lower into a deep-fryer and fry at 375 degrees F. for 45-60 seconds, long enough to bring the inside to serving temperature.

Top with rosette of whipped cream, a cherry & a deep-fried cinnamon & sugar dipped tortilla chip. Enjoy!
